Create draft order & send invoice makes a Shopify draft order with your quoted prices (inventory reserved until the valid-until date) and Shopify emails the buyer the invoice with a checkout link. When they pay, the quote is marked Accepted.
New → Quoted (priced or sent) → Accepted (paid) or Expired (past valid-until). You can set a status by hand.
